Congo Beauties

Ingredients:


1 cup unsalted butter, melted
1 1/2 cups brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup white chocolate chips
1/2 cup milk chocolate chips
1/2 cup chopped walnuts (optional)
1 tablespoon Disaronno Amaretto (optional)


Instructions:


Preheat oven to 350°F (175°C). Grease and line a 9×9-inch square baking pan with parchment paper or lightly butter it.
Mix wet ingredients: In a large bowl, whisk together the melted butter and brown sugar until smooth. Add in the eggs, one at a time, whisking after each addition. Stir in the vanilla extract.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon (if using).
Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Add mix-ins: Fold in the white chocolate chips, milk chocolate chips, and chopped walnuts (if using).
Bake: Pour the batter into the prepared pan and spread it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter).
Cool and serve: Let the blondies cool in the pan for about 10-15 minutes before transferring them to a wire rack to cool completely. Once cooled, cut into squares and enjoy!
